RECIPE: NANA’S ITALIAN FROG LEGS
~ 36 frog legs ~ 4 tbsp olive oil ~ 2 cloves garlic, crushed ~ 1 onion, chopped ~ 2 stalks celery, chopped ~ 1 lb tomatoes, peeled, seeded and chopped ~ butter ~ flour ~ salt ~ pepper ~ 1 tbs chopped parsley
* Sauté the garlic, onion and celery in olive oil. Remove the garlic when it’s brown.
* Continue cooking the veggies until tender. Add the tomatoes, stir and cook for 12 minutes over medium heat. Set aside when done.
* In the meantime, dust the frog legs with flour.
* In a large skillet, heat 4 tbps butter. Add the legs and cook over medium heat until just brown.
* Adjust the seasoning in the sauce with salt and pepper. Pour over legs.
* Cook over medium heat for 5 minutes.
* Sprinkle on the parsley.
* Serve and enjoy.

BACKWOODS HEALTH: THE NUISANCE OF SWIMMERS ITCH by Maggie Burns
  Summer is here and the swimming season has begun which means the chance of catching swimmers itch increases.
  Swimmers itch, also called cercarial dermatitis, is a condition caused by parasitic flatworms. It appears as a skin rash caused by an allergic reaction to certain parasites that infect some birds.
 The flatworm eggs come from bird droppings when the birds do their business in the water or water’s edge and then washed into the water. The eggs hatch and infect snails from which the free swimming form of the flatworm larvae emerges. When there’s no suitable host, another bird, the parasite attempts to penetrate the skin of people who are enjoying the water. The parasite quickly dies as it can’t survive in humans but they can cause an allergic reaction below the skin resulting in welts and itching.
 The welts and itching caused by the parasitic little pest can last for several days to about a week and usually don't require a visit to the doctor. An antihistamine along with calamine lotion can be used to treat the affected areas. Keep an eye on affected areas and consult your doctor if the rash gets too bad.
  Swimmer's itch isn't contagious from person to person.
  Here a couple of steps swimmers can take to reduce or prevent getting the “itch”.
  First of all, if possible, avoid swimming in areas that contain a lot of water plants because these marshy areas often contain more snails, the parasite’s intermediate host. Avoid areas that are known to be affected or posted with warnings about an outbreak.
  Secondly, reduce your time in the water and dry off quickly when getting out. Rinse exposed areas with clean water if possible and dry off.
  And lastly, skip the bread crumbs! Don’t feed birds near swimming areas. You’re only inviting the parasites into your fun spot.
  Swimmers itch is found around the world and is more frequent during the summer months as that’s when more people are in the water. Have fun this summer and avoid the “itch”.

RECIPE: JERKY RECIPES
Alligator Jerky
~ 1 lb gator meat, cut into ¼" thick slices ~ ½ cup Tabasco sauce ~ ½ tsp garlic salt ~ ¼ cup soy sauce ~ lemon pepper seasoning
* Mix the Tabasco, garlic salt and soy sauce together.
* Place meat in zip lock bag. Pour in the sauce mixture.
* Seal and refrigerate overnight.
* Remove meat and shake off excess.
* Place on dehydrator screen. Season generously with the lemon pepper on one side only.
* Dehydrate 6 - 8 hours depending upon your preferred dryness.
* Store in a jar or bag in refrigerator. Adjust seasoning to taste next batch.

Teriyaki Goose Jerky
~ 1 – 2 goose breasts, skinned and de-boned ~ 1 – 10 oz. bottle teriyaki sauce ~ ½ cup soy sauce ~ ¼ cup sugar ~ ½ bottle liquid smoke ~ 1 tbsp black pepper
* Combine the ingredients except the goose in a bowl. Mix well.
* Slice the breasts into strips ¼" thick
* Place meat in a large zip lock bag.
* Pour in the marinade and seal.
* Place in the refrigerator overnight. Turn often.
* Remove the meat and drain.
* Place in dehydrator for 8 – 9 hours or until desired consistency.
* Store in zip lock bags or jars. Enjoy.

Frank's Deer Jerky
~ 5 – 6 lbs deer meat, cut into 1/8" thick strips ~ 1 tbsp onion salt ~ 1 tbsp garlic salt ~ 1 tbsp cajun seasoning ~ 1 tbsp black pepper ~ 1 tsp liquid smoke ~ 1¼ cups soy sauce ~ 1¼ cups Worcestershire sauce
* Mix all of the seasonings together in a mason jar. Make sure to mix well!
* Place the meat in a large glass or stainless steel bowl. Pour the marinade over the meat. Stir to cover all the meat.
* Cover and let set in the refrigerator overnight.
* Drain off the marinade and place meat in a dehydrator.
* Dehydrate for 8 to 10 hours or until desired consistency is achieved. The longer you leave it in, the tougher it will get.
* Enjoy!

BOATIN' TIP: The first “rule of the road” you need to know when boating is knowing when to yield “the right of way”. This means when two boats are approaching one another and their paths will cross the boat that has the other boat on its starboard bow (the right side) is the give-way vessel.
For example, if you are traveling north and a boat is approaching from the east, you are the give-way boat and must yield the right of way to them as they are the stand-on boat. You’re responsible to either steer starboard (right) to pass behind them and/or reduce speed to let them pass in front of you and you pass behind them.
The opposite of that is you’re the vessel traveling east and another vessel is traveling north, coming from your port (left) side. You are the stand-on vessel and are responsible to maintain speed and course so they can safely pass astern (behind) of you.
Of course, this is one of those situations in which knowing the rules doesn’t do much good if the skipper of the other vessel doesn’t know them. The Rules allow for that, saying that the stand-on vessel “may … take appropriate action to avoid collision … as soon as it becomes apparent that the vessel required to keep out of the way is not taking appropriate action.” Regardless, when in a crossing situation, you should at least start by trying to follow the rules.

RECIPE: BACKWOODS BOUND ONE SKILLET DINNER
~ 1 packet Backwoods Bound Chili Seasoning Mix ~ 2 lb's ground beef or deer ~ 1 can diced tomatoes ~ 1 can pinto beans ~ 2 1/2 cups water, divided ~ 2 beef bouillon cubes ~ 2 cups uncooked minute rice ~ 3/4 cup shredded cheddar cheese ~ tortilla chips
* In a large skillet, mix the beef or deer with the chili seasoning mix. Brown and drain off fat.
* While the meat is cooking, bring 2 cups of the water to a boil. Remove from heat and add the bouillon cubes. Stir until dissolved.
* When the meat is browned and drained, add the beef broth, 1/2 cup water, beans and tomatoes.
* Bring to a boil. Reduce heat, cover and simmer 10 minutes.
* Remove from heat and stir in the rice.
* Cover and let stand 5 minutes.
* Stir. Top with the cheese, cover and let stand a couple of minutes to let the cheese melt.
* Serve with tortilla chips.
* Enjoy at home or at camp!
