Backwoods Bound Bullet Volume 18 - Issue 1

  Happy New Year! Welcome to 2017 and the January issue of The Bullet. There are still plenty of hunting opportunities to be had out there. Most archery deer seasons run to the middle of the month. Rabbits, pheasants, quail, geese, coyotes and bobcats are still open for pursuit. And then there’s the trapping for otters, raccoons, skunk, weasel, beaver and mink to name a few that’s still going on. So if you haven’t cleaned and put away your gear, head out for some fun before it’s too late.

If it’s cold enough where you’re at and you are feeling venturous, grab your pole and head out for some ice-fishing. The action can be hot under the ice and a mess of fresh caught gillies or crappie will taste mighty tasty about now. Remember to not take chances when it comes to ice. Know the signs of week ice.

No matter what your pursuit is this month, stay safe, stay warm and have fun.

RECIPE: ROASTED JUNIPER PHEASANT

~ 1 pheasant, cleaned and left whole
~ 1/2 cup juniper berries
~ 1/2 cup kosher salt
~ 1 tbsp black pepper
~ 1 tbsp Bells poultry seasoning
~ 1 medium onion, chopped

* Fill a pot large enough for the pheasant with cold water.

* Grind the juniper berries, salt, pepper and poultry seasoning in blender with about 2 cups of water.

* Stir the ground spices into the pot of water and submerge the pheasant under the water. Place in refrigerator for 6 to 8 hours.

* Remove and quick rinse a little. Discard the water.

* Place pheasant in roasting pan. Sprinkle the onion on and around the bird.

* Roast uncovered at 400 degrees for 1½ hours or until the internal temperature reaches 180-200 degrees. Will be golden brown and juicy tender!

ARTICLE: THE GREAT ICE FISHING EXPEDITION by Jerry Ison

  While serving in the armed forces back in the day, I became friends with a fellow outdoors enthusiast named Milo Pernham. We were so fanatic about fishing and would sneak off to the nearest waterway, river, creek, pond, whatever. We formed a very strong bond that endured long after we were discharged.

  Milo was from Waccamaw, South Carolina and I of course lived in northern Ohio. We kept in touch and there were many times when I would travel south and we would fish for stripers in the Santee, mackerel off Myrtle Beach and go crabbing near Calabash.

  Milo would come north for some of the best bass fishing on the planet in the Sandusky. We went perch and walleye fishing on Lake Erie and crappie fishing in farm ponds.

  Sometimes we would meet half way and fish for bluegill and sauger in the TVA lakes of Kentucky and Tennessee.

  One winter, maybe 1994, late in January, Lake Erie froze thick enough to be used safely for ice fishing. All the local fishermen were getting excited about the possibility for some ice fishing. It had been several years since the lake’s ice had been thick enough to safely venture out onto.

  I wasn’t a great fan of ice fishing. My limited experience was back when a teenager having spent several shivering days waiting for hours while nothing happened in a tiny cold shanty. However, I thought this might be an adventure for my Southern friend and me as well.

  I called Milo and after some effort, convinced him that he needed to try ice fishing since I was sure it was a sport South Carolina waters never offered. He was hesitant, stating his dislike for cold and ice. Especially ice. Except in his sweet tea.

  I finally persuaded Milo to come on up and he arrived on a Thursday. I wasn't expecting him until the weekend and explained that I had to attend a Ducks Forever planning meeting in Sandusky the next day. A year earlier, I had leased a small lot just big enough for a tiny camper and my boat at Turtle Point north of Oak Harbor. Sandusky is only a few miles further east from there, so Friday morning I dropped Milo off at the camper, planning to drive to the meeting leaving Milo to get everything ready. Milo agreed saying he didn't see any problem with that. He seemed really excited at the prospect of trying this new form of sport fishing.

  "Hey man, I been fishing since I was knee-high to a grasshopper. Don't sound too difficult. I can handle it!" he assured me.

  I gave him some last minute instructions on checking the ice thickness and tips for cutting through the ice.

  That afternoon when I arrived back at the camp Milo was sitting in the camper with the heater on high. And now, he didn't seem too enthusiastic about the ice fishing that lay ahead.

  I questioned his change of heart and he replied, "I don't know 'bout you, but it appears there's an awful lot of work in this ice fishing business!"

  I asked, "How so?"

  "Well”, Milo answered, "I been at it fer 'most three hours and only just now got a hole cut big enough fer the boat!"

RECIPE: VENISON SCALLOPED POTATOES

~ 1 lb cooked and crumbled venison burger
~ 6 - 8 medium redskin potatoes, unpeeled, sliced thin
~ 1 medium onion, sliced thin and divided into rings, then cut in half
~ 1 tsp salt
~ 1/8 tsp black pepper
~ 1 heaping tsp Mrs. Dash Table Blend seasoning
~ 4 tbsp flour
~ enough beef bouillon to make 2 cups of broth
~ 1 - 2 heaping tsp brown gravy mix
~ 3 tbsp butter
~ 2 1/2 cups milk

* Preheat oven to 350 degrees.

* Mix flour and seasonings together well.

* In a 8”x12” casserole/baking dish, layer the potatoes, onions and venison. Sprinkle with some of the flour/seasoning mix.

* Repeat until dish is full, with top layer being potatoes only.

* Heat the butter and milk together in the microwave. Get it hot enough to melt the butter. Stir well.

* Pour over the potatoes. Make sure to wet the top layer good.

* Cover with aluminum foil. Pierce foil with knife for steam to escape.

* Bake for one hour and 15 minutes or until potatoes are tender.

* This may boil over so place the baking dish on a foil lined cookie sheet.

* Serve these delicious potatoes with a nice green salad and a side of red cabbage.

* Enjoy.

  I just wanted to say Thank You for your recipe! I'm a born and raised Alaskan and two weeks ago a friend who'd been hunting in Florida dropped 7.5 pounds of gator meat in my lap to make a jambalaya for a large party we hold annually (roughly 150 people.). I'd never made jambalaya, much less one made with gator but I agreed then went in search of a recipe. After several I came across your recipe and it seemed to only use things I would be able to find here locally in Alaska, something I was struggling with in other recipes. I spent all day in the kitchen prepping the 14.5 pounds of meat and gallons of other ingredients and when all was said and done it was a smash hit for a party of folks, 99% of whom (including myself) had never tasted alligator and/or jambalaya before.   I grew up on a small farm and we had every type of animal imaginable. My dad raised rabbits for meat among other things and I'm getting ready to do the same. I'm waiting on my breeding stock at the moment and helping dad build my hutches. So while I have time, I'm looking up rabbit recipes. FISHIN' TIP:  What equipment is needed for a day of ice-fishing? Besides warm clothes and insulated, waterproof boots you’ll need a short ice-fishing rod and a small reel, a pack of size 8 – 10 hooks, small sinkers, tiny slip bobbers and some wax worms or mealworms. If you want to use jigs, get some in chartreuse or red colors. Or try small jigging spoons. And an ice auger would be helpful.

RECIPE: DUCK AND WILD RICE CASSEROLE

~ 1 duck, cut into serving pieces
~ 1/2 cup wild rice
~ 1 package onion soup mix
~ 1 cup water
~ 1 small can mushrooms, drained
~ 1 tsp salt
~ 1/2 tsp oregano
~ 2 tbsp grated orange peel

* Place the duck in a casserole dish.

* In a bowl, mix the rice and soup mix together.

* Add the water and mushrooms. Stir together.

* Place the rice mixture between the duck pieces.

* Mix the seasonings together and sprinkle on the top of everything.

* Cover and bake at 350 degrees for 2 hours.

* Check a couple of times and add more water if necessary.

* Remove from oven and let set for a couple of minutes.

* Serve with a green salad and enjoy.
