Welcome to the February 2023 issue of The Bullet. It may be winter time but there are still things to do in the great outdoors if you’re brave enough to venture out. You can go fishing, either through the ice or on open water. Many states have extended their trapping and hunting seasons (think rabbits and squirrels here) to the end of the month so you have that going for you. Braving the ice and snow to spend time with your buddies gawking at the newest outdoor gear at your local sports show can be therapeutic for the “winter blues”. Or you can just stay home and dream at the fireside of the adventures awaiting you this summer. I think I’ll do a little of each.

RECIPE: DIVINE SQUIRREL
~ 2 -3 squirrels, skinned and meat filleted off the bone ~ 1 can beer ~ 1/2 cup Cola soda ~ minced garlic ~ bay leaves ~ thyme ~ salt and pepper ~ corn starch ~ oil
* Wash the meat and remove any shot.
* In a large bowl, mix most of the beer with the soda.
* Add in some garlic, a bay leaf of two, some thyme and/or your favorite herbs.
* Salt and pepper the meat then add to the bowl. Cover and refrigerate a couple of hours or overnight.
* Remove meat and shake off excess liquid.
* Season some corn starch with a little salt and pepper.
* Heat about ¼” of oil in a large iron skillet over medium heat.
* Dredge the meat in the corn starch and add to the oil.
* Fry until golden brown turning as needed.
* Drain on paper towels.
* Serve over a bed of field greens and turnips or with your favorite sides then enjoy.

ARTICLE: CAMPGROUND HOSTS NEEDED FOR SUMMER SEASON
The summer camping season will be here before you know it and many states are looking for volunteers to act as “hosts” for the guests that will be enjoying the many campgrounds found in and around state parks.
Volunteer campground hosts live in the parks in their own campers free of charge and help the park staff by checking in campers and being an informative resource to visitors enjoying the state parks and forests. Sometimes you’re asked with helping with light maintenance duties around the campground or park.
Most programs require you to work a certain amount of hours per week and all require you being there for the busy times on weekends and holidays.
If camping out all summer sounds like something you want to do, contact your state’s Department of Nature Resources or Conservation for details on what is offered in your state. They’ll be glad to have you.

FUN FACT:  The Washington Monument was completed on December 6, 1884. It was the tallest structure in the world at the time at 555 feet 5 inches. It is built with 36,000 marble and granite blocks. It is capped with an aluminum cap that is nine inches tall with an inscription in Latin that says, “Laus Deo” which means, praise God.

RECIPE: SUPER GOOD DUCK
~ 2 duck breasts cut into 1" cubes ~ chili powder ~ garlic salt ~ Emeril’s Southwest Essence seasoning ~ 1 stick butter ~ 1 medium onion, chopped
* On a large plate or cookie sheet, make an individual line or pile of the chili powder, garlic salt and Essence.
* Dip each piece of the duck into each seasoning. Rub the seasonings into and all over the meat. Set aside.
* Melt the butter in a large skillet over medium–low heat and sauté the onion.
* When the onion is tender, add the meat and sauté until done.
* Serve and enjoy.

ARTICLE: WINTER FUN by Lloyd Barnhart
The Beaverkill seldom froze over solid
Back when we were kids.
We longed for those far too seldom days
When ice was thick and safe for us to play on.
Safe ice gave us an opportunity
To enjoy our river during the “off season”.
Moms, of course, worried about this;
They insisted that a responsible adult check the safety of the ice.
Just plain skating was our favorite frozen river pastime
On the bigger eddies that froze first.
The old Parish swimming hole and Pete’s Eddy
Were usually first to freeze.
It was fun to get off the mill pond and on the river
Where we could catch the wind and glide effortlessly.
On those rare occasions when the rapids froze
We were treated to a rough, wild, exciting downstream ride!
At some point, we started playing our version of “hockey”
Ice chunks for pucks…bent root saplings for sticks.
Most games were one-on-one, or two-on-two;
Only loosely did they resemble the real sport.
To a kid, we preferred plain old skating over hockey;
Skating was free and easy; Hockey was competitive and had rules.
We were especially fortunate when some of the local men
Invited us to join them for some ice fishing.
“Hooking Suckers” was the traditional local form of ice fishing,
Practiced by the likes of Charlie Allen, John Gilmore and Walt Maus.
These and other good old boys often took us kids along
And taught us how to fish in this unique way.
They taught us how to drive ‘em...How to hook ‘em;
And, afterward, even suggested how to cook ‘em!
I remember falling through the ice, hooking on Barnhart’s;
Daubek said, “You came out a helluva lot faster than you went in!”
We hooked on Cairns’ one cold January day;
Jim cut the holes: 24” of ice, with his chainsaw!
Been better than half a century since I played on the Beaverkill ice.
But the memories are vivid; I replay them often.
When I do…I’m young again, and
Enjoying good old fashioned Winter Fun!!

FISHIN' TIP: The paddlefish snagging season opened on the first of February for most of the country including the Missouri River watershed so make sure you have the proper licenses and tags to legally go after these fish. Also if you snag a fish that has a band in its lower jaw, be sure to call the phone number on it and report your harvest. State fisheries agencies tag paddlefish to better understand and manage populations. Tagging provides valuable information to estimate population size, fish movement and growth. ARTICLE: ART OF NATURE: TOO MANY OPTIONS by Gary L. Fitzgerald
Nature offers serenity. In my eyes, it is the only thing that really does. What you see is what you get! No options.
We, as humans have so many options. Does the car need air conditioning, navigation, speed control? Does the house need hardwood floors, carpeting, shudders, or brick? Do we need make-up, a hair transplant, short skirt, long skirt, suit, tie, or a turtleneck?
Which computer? What cell phone?
Think about it: nature does offer serenity. Be smart: take time to look, learn, appreciate and feel serene with nature. Our lives would be simpler, I believe, if we took time to simplify our lives and don’t spend so much time on options. Spend some time with nature and feel at peace with yourself.
You will like it! I know!

RECIPE: ROASTED SALMON
~ 2 – 3 lb salmon fillet, skin on ~ 1 stick butter ~ lemon pepper seasoning ~ onion powder ~ garlic powder ~ salt, optional
* Rinse the fillet to get rid of scales on the skin. Also remove any bones.
* Heat your oven to 475 degrees.
* Either melt the butter in a small pan and pour into a baking pan big enough for the fillet or melt the butter directly in the pan while preheating the oven.
* Place the fillet in the melted butter skin side up. Make sure the flesh side is coated well with the butter.
* Cook 5 minutes then flip the fillet.
* Seasoning liberally with the lemon pepper and lightly with onion and garlic powders. Sprinkle on a little salt if desired.
* Cook another 5 – 6 minutes or until it flakes easily with a fork and cooked through.
* Serve and enjoy.

ANSWER TO BACKWOODS TRIVIA: The third amendment of the Bill of Rights says that “No Soldier shall, in time of peace be quartered in any house, without the consent of the Owner, nor in time of war, but in a manner to be prescribed by law”. In other words, the government can’t forcibly make you house soldiers in your home without your consent.
FYI – The first ten amendments to the Constitution are known as the Bill of Rights. There are a total of twenty seven amendments.
