~ 2 cups white cornmeal ~ 1 egg ~ 1 cup chopped onion, or 1/2 cup dried onion flakes ~ 1/2 tsp salt ~ 1/2 tsp baking powder ~ 1 tbsp sugar, or to taste ~ milk, enough for pancake mix consistency

Mix all ingredients well in a bowl. Use just enough milk for a pancake like consistency.
Spoon about 2- 3 tbsp of the batter or enough to form a small cake onto hot oiled skillet. An iron skillet works best.
Cook until bubbly and brown around the edges
Flip and repeat.
Serve with syrup or honey.
