Roast Raccoon In Red Wine

~ 1 raccoon, cleaned and quartered
~ 2 cups boiling water
~ 3 beef bouillon cubes
~ 2 large yellow onions, chopped
~ salt and pepper
~ 1 – 2 cups cheap red wine
~ 1/2 - 1 tbsp coriander seeds
~ 2 – 3 tsp dried rosemary
~ 2 – 3 tbsp brown sugar
~ 1/4 tsp cayenne pepper
~ 2 – 3 tsp Worcestershire sauce
~ 1 – 2 tsp honey

Boil the raccoon in salt water for 30 minutes. Remove.

In a large bowl, mix the other ingredients together.

Place the meat in a 9" x 13" baking dish.

Pour on the wine mixture. Cover and bake 2 – 3 hours at 325 degrees.

Baste every half hour or so.

Remove from oven and let set a couple of minutes.

Serve and enjoy.
