Creamed Pheasant

~ 2 – 4 pheasants, cut into serving pieces
~ 1 – 2 eggs, beaten
~ flour
~ salt and pepper
~ your favorite herbs and spices for frying chicken
~ oil
~ 1 large onion, sliced
~ 1 lb fresh mushrooms, sliced
~ heavy whipping cream

Season some flour to taste with salt, pepper and your favorite spices.

Heat some oil over medium-high heat in a large skillet.

Dip the pheasant pieces in the egg and them in the flour. Add to the hot oil.

Turning as needed to cook to golden brown.

Remove and drain on paper towels.

Place the pheasant in a baking dish.

Layer on the onions and mushrooms. Cover with whipping cream.

Bake at 350 degrees until thick and bubbly.

Remove from oven and let rest a few minutes.

Serve with your favorite side dishes and enjoy.
