Bourbon Peppercorn Backstrap

~ 1 - 2 lb pork backstrap/loin
~ 1 package Kroger brand Bourbon Peppercorn marinate or equivalent
~ 1/2 cup bourbon
~ 1 clove garlic, minced
~ 1 medium purple onion, sliced into thin wedges
~ 1/4 cup flour for gravy, optional

Mix mariante according to package directions. Add the bourbon, garlic and onion.

Place the meat in a large zip lock bag and pour on the marinate.

Seal and refrigerate at least an hour. Longer is better.

Place the meat and the marinate in a cooking bag.

Bake at 350 degrees for 1 1/2 hours.

Remove from oven and allow to rest 15 minutes.

While the meat is resting, remove 2 cups of the broth from the cooking bag.

Place in a sauce pan and bring to a boil.

Stir in 1/4 cup of flour and stir until thick and bubbly.

Slice the loin and serve with mashed potatoes topped with gravy.
