Cajun Baked Catfish

~ 4 catfish fillets, about 6 ounces each
~ 1/4 cup yellow cornmeal
~ 1 tbsp Cajun or blackened seasoning
~ 1 tsp dried thyme
~ 1 tsp dried basil
~ 1/2 tsp garlic powder
~ 1/2 tsp lemon-pepper seasoning
~ 1/2 tsp paprika
~ milk

Preheat oven to 400 degrees.

Line a baking sheet with foil and spray with non-stick spray

In a shallow bowl, mix the cornmeal and all the seasonings together.

Dip fillets milk, drain excess and then dip in the cornmeal mixture to coat both sides.

Place on baking sheet.

Bake until fish begins to flake easily with fork, about 20-25 minutes.

Serve and enjoy with your favorite side dishes.
