Rob's Parmesan Baked Fillets
Thanks to Robert Stanton for this recipe.

~ a mess of trout, panfish or walleye fillets, cut into 4" lengths
~ 1 cup flour
~ cayenne pepper
~ salt and pepper
~ paprika
~ 3 eggs, beaten
~ 1/8 cup milk
~ 2 parts Panko crumbs
~ 1 part grated Parmesan cheese

Preheat oven to 425 degrees.

Wash and dry fillets.

Put flour in a bowl and season to taste with the seasonings.

In another bowl, beat the eggs with the milk.

In another bowl, mix the Panko and cheese together.

Roll the fillets in the flour then dredge in the egg wash and then roll in the cheese mixture.

Place on a greased cookie sheet.

Bake for 15 minutes or until the fish flakes easily with a fork.

Serve and enjoy with your favorite side dishes.
