Stove Top Smallmouth Bass

~ 1 2 lbs smallmouth bass fillets
~ 1 stick butter
~ lemon juice

Heat 1/2 stick butter and 1/2 tsp lemon juice in a large skillet. Mix together and heat until very hot but short of smoking.

Add some fillets and sear quickly on both sides. This should brown the fillets slightly.

Lower the temperature and continue cooking until fillets flake easily turning as needed.

Remove and keep warm while you cook the rest of the fish using the rest of the butter and more lemon juice.

Serve and enjoy.
