Bluegills with Cheese Sauce

~ 1 lb bluegill fillets
~ 1/4 cup chopped onion
~ 2 tbsp butter
~ 1 tbsp flour
~ 1/2 tsp dry mustard
~ 1/4 tsp caraway seeds
~ 1/2 cup milk
~ 1/2 cup shredded cheese
~ 4 tbsp beer, optional or use less

Arrange the fish in a greased baking dish.

Bake at 450 degrees until the fish flakes easy.

While the fish is cooking, melt the butter in a sauce pan. Add the onion and cook over medium heat until tender.

Stir in the flour, mustard and caraway seeds.

Add the milk and stir until thick and bubbly.

Add the cheese and beer and cook on low until the cheese is melted.

Pour the sauce over the cooked fish.

Serve and Enjoy.
