Dove Nuggets
Many thanks to Chip Evans of Texas for sharing this recipe.

~ 16 - 20 dove breasts skinned & filleted off the breast bone
~ 2 eggs
~ 2 cups milk
~ 2 cups flour
~ black pepper
~ fajita seasoning
~ steak seasoning
~ oil

In a large bowl, beat the milk and eggs together.

Season the breasts to taste with the pepper, fajita seasoning and the steak seasoning.

Soak the breasts in the milk mixture for at least 1/2 hour.

Heat the oil in a iron skillet over medium high heat.

Place the flour in a large ziploc bag and shake the breasts in the flour. Redip them in the milk and then shake again in the flour.

Cook the breasts in the preheated oil until golden brown, turning half way through.

Use the pan drippings to make a cream gravy. Season the gravy with more of the pepper, fajita seasoning and the steak seasoning. Also try adding a little cayenne pepper to kick it up a notch if you want.

Serve with mashed potatoes, vegetables and biscuits.

Enjoy!
