Grilled Backstrap
Thanks to Thomas Niles for sharing this recipe.

~ 1 side deer backstrap
~ 1 – 2 cloves garlic, thinly sliced
~ seasoning salt
~ 1 lb bacon

Make small cuts in backstrap a couple of inches apart on both sides.

Place a slice of garlic into each cut.

Sprinkle on the seasoning salt and rub into the meat. You can use your favorite seasonings too.

Wrap with bacon slices. Secure with toothpicks if necessary.

Place on hot grill and cook over medium heat until medium rare in the middle.

Remove from the grill. Cover with foil and let rest a couple of minutes.

Slice, serve and enjoy.
