Backwoods Bound Enchilada Casserole


~ 1 packet Backwoods Bound Chili Seasoning Mix
~ 2 lb's ground beef or deer
~ 1 medium onion, chopped
~ 1 can enchilada sauce
~ 1 package flour tortillas
~ 1 can refried beans
~ 1 small can sliced black olives
~ 2 cups shredded cheddar cheese
~ sliced jalapeno peppers, optional
~ optional toppings; sour cream, chopped tomatoes, shredded lettuce, etc

Mix the seasoning, meat and onion together. Cook in a large skillet until done. Drain.

While meat is cooking, warm the beans in a sauce pan.

Cover the bottom of a greased 8 x 8 or a 9 x 13 cake pan, depends upon thick you want it, with half of the sauce.

Layer on 1/2 of the tortillas overlapping as needed.

Spread on the warm beans and then the meat. Spread on some jalapenos if desired.

Spread 1/2 of the olives and cheese on next.

Cover with tortillas. Spread on the rest of the sauce, cheese and olives. Spread on some jalapenos if desired.

Bake at 350 degrees 20 – 30 minutes until bubbly.

Serve with your favorite toppings and enjoy.
