I'll get back to you later but my email is bstreight@yahoo.com but most of the recipes that I have pertain to turtle soups however,I know I have a few recipes for frying and baking somewhere,I just have to find them first! I will say this for frying,the key temperature is 350 degrees and the turtle meat doesn't take long at all to cook! Soak the turtle meat in salt water for awhile and then,you can marinate it in hot sauce and there are other various marinades that can be found in the grocery stores where where you find hot sauce! You can marinate the turtle meat for a few hours to overnight in a sealed zip-lock baggie! You can use use beer,fritter and pancake batter but make sure that you dredge the turtle meat in flour first before you dip it in the batter of your choice! You can also dredge the turtle meat in seasoned flour and then,in beaten egg and then,you can dip it back in the seasoned flour or breadcrumbs! Sincerely,Brad Streight
