If you have never had the opportunity to hook a good sized Texas Gar, you need to put it on your bucket list becuase they are excellent table fare. A South Texas tradition is to deep fry the fresh caught Aligator gar in a corn meal batter with lemmon pepper, the best part is you do it outdoors over a mesquite wood fire in a "disco" right off a tractor. I'm telling you it's heavingly and something between a mix of catfish and redfish, but even better!!! |
